Seems like HP is having a hard time keeping these pre-released webOS doctors from coming out in the open. webOS 3.0.5 comes as a new update and release candidate for a most probable future official update of webOS 3.0.5. Maybe to fix some issues that we have heard in the past..ahem, sound, gaming. For links and FAQ, read on.

No, all apps when using the webOS doctor 3.0.5 RC will erase all settings. When restoring the HP TouchPad via Palm Profile, it will back up majority of the apps you have purchased through the HP App Catalog. Any other apps will have to be reinstalled again.
Can I go back to webOS 3.0.4 if I don't like webOS 3.0.5 update?
You can redownload webOS 3.0.4 in this thread, and install webOS 3.0.4 using the doctor there.
How will I update when the official webOS 3.0.5 update is available?
You will need to download the doctor by logging into your Palm Profile, or simply get the webOS doctor from this thread again, as the direct download link will be provided when it is released.
